Serves: 3 (2 muffins per serving)

Ingredients :

½ can (from a 15 ounces can) black beans, drained
5 tablespoons coconut palm sugar or swerve
2 tablespoons unsweetened applesauce
1 ½ tablespoons ground flaxseeds
½ teaspoon arrowroot powder
1/8 teaspoon salt
6 tablespoons cacao powder
½ small banana, sliced
3 tablespoons water
¾ teaspoon baking powder
½ teaspoon vanilla extract

Directions :

1. Preheat your oven to 350° F.
2. Add black beans, sugar, applesauce, flaxseeds, arrowroot, salt, cacao, banana, water, baking powder, and vanilla into a blender and blend until well incorporated.
3. Grease a 6-cup muffin pan with some cooking spray. Place disposable liners in the muffin cups.
4. Divide the batter among the muffin cups.
5. Place the muffin pan in the oven. Set the timer for about 25-30 minutes or until the top rises, brown, and cracked.
6. Remove from the oven and cool.
7. Remove from the muffin tin and serve.
